This is a non-bulbing type of fennel that is grown for its leaves and seeds. The leaves are a gorgeous reddish bronze color and are a sweet and tasty addition to salads, cole slaws, and dressings. I like to use it in tea too. The seeds can be used in place of anise seeds in baking and Italian dishes.
