I got the seeds for these very special peppers from John Swenson, seed saver, who got them from France. Espelette is a famous French pepper and is very rare in the U.S. The peppers taste good fresh, but really shine when they are dried and ground into paprika. The paprika has a mild heat to it, along with a vibrant smoky, sweet flavor. The peppers are bright red when ripe, narrow and about 6 inches long.
