Also called Lacinato or “dinosaur” kale (because the wrinkled leaves look like dinosaur skin), the extra-dark green, non-curled, but heavily blistered (savoyed) leaves of this variety are very tender, perfect in kale salads, soups, and side dishes. This is my best-seller! And while it is versatile and has a fabulous flavor, it’s not as productive as curly green kales.
