Summer Berry Jam

Many years ago, I had an Evanston market customer who was English and she told me how to make Summer Pudding which is just summer fruits, a little sugar and some good bread. I was skeptical, but tried it and was surprised to find that Summer Pudding was magical…a mixture that turned out to be greater than the sum of its parts!

In this jam, I am recreating the fruit part of the summer pudding. The secret ingredients are the red and black currants. The English lady told me that you could put in whatever summer berries you had, but in that mix, you must have some currants. Our mix of summer berries in this jam is strawberries, blueberries, red raspberries, and both red and black currants.
